[access-uk] Controlling auto-features in Word

I am writing instructions for  something and, of course, I want to separate 
the different steps with numbers and the sub-sections with letters.
Unfortunately, after I've typed 1. or a. at the beginning of a line, Word 
writes automatically 2. or b. in the next one when I don't want it to 
happen.
I end up having lots of numbers and letters to delete and this gets quite 
confusing as the instructions are a bit complicated. How do I turn off the 
automatic numbering please? I've looked in auto-format, thought I unchecked 
the relevant item but it hasn't made any difference.
Incidentally, would love to be able to turn off date auto-complete as well.
