An IREC team I worked with used 1000 lb load cells from e-bay last year.
After calibrating with 790 pounds dead weight when the system was turned
off and then turned on again it was within 2 pounds when 790 pounds was put
on it again.

building small solids, or cold gas thrusters, or spark torch igniters.
Don't even have to worry about blowing it up at that price.
You still need a DAQ, but that can be an Arduino or an all-in-one or even
a recording o-scope.
