A variation on this is to use resistive sensors, and put enough current through them to cause significant self-heating (either steady state or in an occasional pulse) -- liquid cools them much better than gas does. Obviously this works best if the sensors are inside the tank, but it can improve sensitivity even on the outside.

You can do capacitance sensing, measuring the capacitance between (say) a pipe and an electrode running up its center. Doing this with LOX is a bit of a hassle because its dielectric constant is a function of density, i.e. it changes with liquid temperature.
