You have something against being useful to this community?
In practice, engineering tests of something useful to this community are
likely to be a lot easier to devise than science experiments which cover
something that thousands of previous sounding-rocket flights have not
already covered. (Gathering a little bit of poorly-calibrated data of a
type already collected many times before doesn't seem to me to qualify as
a "cool experiment".)

Lots of them; the atmosphere above about 100kft is difficult to reach and
poorly understood. But how do you do something scientifically useful
there with one or two flights of a small sounding rocket on an amateur
budget? The *easy* things generally were done long ago.
I don't say it's *impossible* to find something scientific that's novel
and "cool" and can be done easily and cheaply; I do say that it's going to
be difficult and I would bet against success.
