A sample lesson can be valuable, but it isn't improvisation. A teacher who wants the job will probably spend more time preparing a sample lesson than a regular weekly lesson. Also keep in mind that pupils usually behave much better when the principal is in the room. As someone who has been on both sides of the audition table (in musical groups and theatre), I can tell you that auditions are an indication of what a person is capable of but offer no guarantees.
