For two PSTN lines you will need to look at the range of analog cards
available :

Also read up and get comfortable with the terms FXS and FXO. A 2-Port
FXO like this

may do fine for you.
Regarding the GSM sim adapter, the only time I used something like this
was with imported hardware, so you may need to search for a while to
find what you need. But it does work and it can be made to work with
Linux. My only advice is to be very careful about setting up your
computer to automatically reply to SMS's - we did that by mistake and
Hutch spammed us with some cricket promotion and we ended up with a huge
bill. So don't automatically reply to SMS's.
