Seems you can no longer restore apps via iTunes. You can only do it via
the appstore on your phone.
So, looks like you can't roll back to previous app versions any more.

I am intrigued by your question as I find iTunes very difficult to use from
PC to iPhone. I prefer NVDA, but I see that neither of these screen readers
has a happy relationship with iTunes!
I came across this link for "iTools" which is offered as a free alternative
method for working the iPhone without using iTunes. Try this link:

As I understand it, the idea is to remove your upgraded app from the iPhone
so that the app is no longer present on the iPhone in any form. The original
app is still on the PC in the earlier version which you want to use. It is
now necessary to copy the original app from your PC to the iPhone. Apple
calls this "synching" but it is really just copying the app over. From my
reading, it looks as though iTools will allow you to copy the app across to
the iPhone as long as you have deleted the new version of the app from your
iPhone.
If you would like to try this, it would be interesting to hear how well it
works!

I've updated an app on my phone but some functionality is now broken.
I believe its possible to downgrade to a previous version of an app using
iTunes.
