Hi Andrew, What about using a sound recorder, such as Total Recorder, or Sound Forge, to record the output from the MIDI port on the sound card, then save it as MP3? That would certainly do it. If there is any software that does this, which I doubt, it would have to be quite expensive, quite technical and possibly won't give you what you want.
