I'd be inclined to look at the flow temperature at a number of points
across the cat-pack exit. Dunno how hard it is to find thermocouples
that'll survive in an oxy-steam mix that hot, mind - if that's an
impracticality, then an indirect temp measurement at the exit might serve.
