I don't know how many people on this list agree with me, but i prefer
FreeBSD as file server. It is rock solid.
Ubuntu is designed more to me a user friendly system, i did prefer to
use a server based system like Fedora(min install) or centos. You can go
for minimum installation & then install the file server packages
required for you.
Fedora DVD was on LFY a month or two back...should be easy to lay hands
on.. might save you on the transport too.. ;)
