I'd reckon the best method in the absence of a job that demands you
learn this knowhow is to follow, track and work on opensource
projects.

I used to be an active member of the LEAF project a while ago. It is
still active. Other distros too exist in the same application area
like routerlinux. It is a distro aimed at a customer premise edge
networking appliance and so lays accent on routing, firewalling,
proxying etc. Basic principles are still the same though. You can
choose an area of interest and will be able to find a embedded linux
project in that area for sure. If not, then you a good greenfield
project.
