I heard that the consumer-level DSLR camera bodies (sub-3k) have
overheating problems when shooting footage for video for extended
periods of time (like 15+ mins).

Any truth to this?

Of course, there are the issues with horrid mics, limited storage and
so on on the consumer-level DSLRs as well.
