I don't know about He, but some high vacuum systems use fittings with a couple
of machined sharp bumps in a ring on each side, with a flat copper disc sealed
in between with the sharp bumps pressing into the malleable copper.

One use per "gasket" but they seem to work well, and copper recycles fine...
