Because it's more than a good idea, it's the only practical method. Not new
either. Sea Dragon was designed to be a space truck to transport 1000 tons
of propellant,water,concrete and other resources to LEO.

FWIW, there were several other cryo storage/transfer demos also funded
via the Tipping Point Technologies program in addition to SpaceX. ULA, LM,
and ETA Space also got contracts for cryo fluid management/transfer flight
demos. Altius is doing the cryo transfer system for ETA Space's LOXSAT1
demo.
