I love having them do creative work based on actually having read the book. 
I alternate with a book report like that (similar to what you described) and 
an in-class quiz.  I reached that decision because what we see in our school 
is that students rerun creative book reports from former students.  I don't 
consider plagiarism a mundane issue, I consider it a serious one.  I want 
them to really read and to really write.

In my class, the less creative ones can list 10-20 new words that they've
encountered and using them make up a story or article or whatever they wish.
