I believe I can. I tried to tell JAWS not to speak the greater than (>) symbol by using this feature, but it didn't honour the setting. I even tried changing the punctuation level, but it again didn't honour the setting. The only workaround was to make an entry in the dictionary manager, replacing the greater than (>) with a space.
