Essentially when you take the picture there are three exposures, which are then combined to extend the dynamic range of the image. I've seen this in Photoshop before; yesterday Apple announced that it is included in iOS 4.01 and the cameras in the iPhone 4 and new iPod Touch now offer this as a shooting option.
