Apologies I'm a bit late on this but Ronan and Dave have already given
excellent advice.
I've found mapping drives to Sharepoint libraries that I access regularly
to be the most efficient way of getting to what you want. It does depend
though how Sharepoint is going to be implemented in your organisation. In
our case, we are using it primarily as a file repository, but there are
lots of other things you can do, such as shared calendars and announcements
lists or message boards. The good news on those though is that with a bit
of tweaking and the right permissions, they can all integrate with Outlook.

Do you know what versions of Exchange and SharePoint?
I find Outlook 2010 and Outlook 2013 very accessible and easy to use with
NVDA. It will need familiarisation of course but it seems fully accessible.
SharePoint is another story. The consensus of what I have read seems to
suggest that SharePoint 2007 was virtually unusable. SharePoint
2010 became accessible to a good extent but not easy to use. It seems that
Sharepoint 2013 and 2016 have improved in accessibility but I haven't
found anyone saying that it is easy to use.
I have been using SharePoint2010 over the last year.
I am using NVDA as a screen reader.
SharePoint prefers Internet Explorer as a browser, particularly for ActiveX
controls and interfacing between SharePoint and Excel. but some features
of it work perfectly with Mozilla Firefox.
The initial impression of SharePoint is a bit off-putting.
Each page has a lot of links ( in my case at least 150).
The toolbar menus seem to work but are very sluggish taking over 10
seconds to move from one button to the next for me.
You will need to take a fair bit of time to become familiar with a page
layout and develop your own work-arounds to find things..
However, so far, I have been able to find a work-around to do everything I
needed to do, albeit after a lot of trial and error .
Some suggestions:
Use webpage search in JAWS or NVDA to find the text you are looking for
on a page.
Use the links list as a way of finding the link you want.
There are Headings and tables on pages, but these don't seem ideally
located to me. I have found the following approach is the quickest when on
a page that shows a library or folder of documents:
When you are on a page that shows a library / folder containing documents,
hit X to jump to the top of the file list and hit X repeatedly to jump from
doc to doc. X is the browser navigation key for Checkbox.
Once you land on the document you want, it is fairly straightforward to
open and read or edit it.
(note that using cursor keys doesn't seem to be an effective way of moving
doc to doc).
Windows Explorer seems much easier to use. You can map a drive in Windows
Explorer to a site in SharePoint. However, if you do this through Windows
Explorer, you may get a set of old or archived folders appearing as well as
the live set.
There is a separate way of mapping from front-end SharePoint from the web
side and I think this is better, but it has separate limitations.
SharePoint has a thing called a list. This looks like a spreadsheet.
It is possibly accessible but doesn’t seem to me to be screen-reader
friendly. You can export a list as an Excel Spreadsheet and refresh it
every time you open the spreadsheet. With a bit of trickery and assistance
from a SharePoint expert, it is possible to update the list from the
spreadsheet but this doesn't work out of the box.
I think this is the best approach also for a SharePoint calendar.
I suggest you compile a list of the things you will need to do in
SharePoint and come up with a work-around for dealing with each one.
Some things will be quite easy. For instance if you need to look up a
particular spreadsheet or doc stored on SharePoint on a regular basis, once
you know its page and document name, you can mark the page as a favourite
go straight to the page and use JAWS search or use the links list to find
the doc on the page and open it.
I think SharePoint 2010 is possibly accessible, but I have found it
cumbersome and slow to use. It doesn't appear to me be ideal for screen
reader use.
There is documentation on using shortcut keys in SharePoint available on
the web. The keys don't always seem to behave as documented for me, but
this may be due to certain options not being set correctly, or possibly
due to a wrong browser version. However, I think if you have enough time
and patience you can probably do most things.
There is an option on each page "Turn on more accessible mode" I found This
is some help in some situations.
I have found documentation on shortcut keys.
My impression is that you may need to Google everything you want to do and
over time you will be able to build up a set of instructions on how to do
each task. You may need a lot of patience! You may also need to get options
set in a particular way.
but as yet I haven't found a comprehensive set of hints and tips and
recommended option settings that make SharePoint easy to use with a
screen reader. If you find one please post the link to this list!

MS Outlook is absolutely accessible, I find it very good overall, once
get used to the menus and shortcuts of course.in
Exchange accounts can also be accessed very simply and accessibly on
mobile, both on iOS and Android.
Sharepoint I'm afraid isn't such a pleasure to use. By default, at
least
my case, Sharepoint is accessed through a web portal. It isin the ass!
technically largely accessible, but in my opinion is at best a royal pain
Stuart did though recently mention on this list that it is possible tomap
Sharepoint to Windows Explorer, so you can use it a bit more like howmyself.
you would use Dropbox I guess, so this is probably something you
should investigate with your IT department. I've been meaning to do that
