Yes, you have to be wary of what you need to retain but for the final internet editions that are in greyscale/"black and white" a lot can be dropped. Technically speaking the PNG-8 files within the browser is never likely to go much above a 72 dpi "Text Size" anyway. For the master images obviously you'd retain more meta data. You can reintroduce some values anyway. In either case the PNG-8 is scientifically superior at compression than GIF. You also have to ask what has been kept in the current GIF files and by the looks of things not much.
