I'm going to insert my replies beneath your questions.  I'll preceed my answers 
with the string "df"

I know you can read a text if it�s received when the phone is locked.
However, once unlocked, does the message appear in messages, or under the
phone options, such as recents or contacts?
"df" The messages all appear under the messages app.
Is the most recent message always at the top?
"df" Yes the most recent message either sent or received appears at the top.  
The iPhone organises messages very differently to other phones.  In essence, 
phones such as the nokias simply organise messages in chronological order.  On 
the iPhone, your messages are organised in conversations.  So, when you open 
the messages app, you see a list of messages.  When you double tap these, you 
get brought into a further list containing all messages between you and a 
certain recipient.
Having read text messages, I was surprised not to find  a reply  button.  I
now understand that if you choose edit, you can compose a reply and then
send it.
"df" you don't need to do this.  Try the following:

1.  open the messages app.
2.  Find the message you want to reply to.
3.  Bring your finger to the bottom of the screen.  There you should find an 
edit field.
4.  Double tap this.  It should now tell you that the edit field is "editing".  
This means you can type text into it.  Now simply type your reply.
Where do you go to compose a totally new message?
"df"  Wehhn you open the messages app, there is a compose button about half way 
across the screen, just above the search edit box.
I�m confused as to the difference between recents, contacts  and  messages!
"df" Ok the recents list is a list of all calls you have received.  Contacts, 
is a list of all your contact data on the phone, and messages is a list of all 
messages sent and received by you.

Another problem I find, is that the volume of the   ringing tone can be
low.  It may be a question of the volume keys on the side of the phone
being knocked about in my pocket.  I think the volume is set  to max under
Settings.
"df" Under settings, you'll find a "sounds" panel.  Make sure the volume in 
there is set as high as you need it.  This can be a pain, but the volume switch 
shouldn't really impact on the thing, however it does.
