Hi Eamon,
If you have new messages and you unlock your phone it should tell you
you have one, 2 or 3 messages ect.  If you only have 1 new message
double tap and it will read the message.  If you have 2 or more
messages double tap and you should be in the edit area.  To make sure
you are at the first message do the 3 finger swipe twoards yourself
and double tap on the message you want to hear.
To get to the next message go to the top left and double tap on messages.
It should tell you how many unread messages you have so just use your
finger to go through them and double tap on the one you want to hear.

To compose a totally new message you need to go in to messages and
when you hear messages, double tap on it again.  this will bring you
in to the edit area.
Find the compose button on the top right and double tap on it.
Now you will be asked who you want to text so near the top right of
the screen is a button called add from address book which you need to
double tap.
Now go through your contacts until you come to the person you want to
text and double tap.
Then right your message and double tap on the send button on the bottom right.

To change the ringing volume on your phone, you need to go in to
settings, sounds and double tap.
Move down to volume and it will say what the volume is set too.
Too decrease the volume swipe with your index finger twoards you and
too increase it swipe with the same finger in the opsite direction.
As you do this it will play a little piece of your ring tone.

As far as I know, the volume button on the side of the phone changes
the volume of the speach and a phonecall.
