going any further, I'd like to know if you guys think it could be

Yes, this generally would be a nice feature. On the other hand I am
asking myself whether it would be worth the coding effort.

For every Midi-controllable parameter, one can use an external
application like qmidiarp (providing jack-tempo synced LFOs among
other things, even with hand-drawn waveforms) to achieve something
similar.
One of the good things about Linux audio is it's modularity,
alleviating a single app from the burden to provide every feature.

If, when not used, this would make yoshimi less efficient or if the
GUI would significantly change, I'd be somewhat opposed.
But if this integrates efficiently with a Midi-learn feature, why not.
