Right now i am running a fc6 server box where sendmail looks after
sending mail while i use fetchmail for downloading the mails from my
email service provider's server. Can the same behaviour be repeated
with the combination of postfix+fetchmail

yes - default install of postfix plus a line on smarthost will do the  
trick - aswill default install of fetcmail
