Postfix uses sendmail config files (postfix is a drop-in replacement for
sendmail). SMARTHOST is defined in the sendmail.mc file. You'll get a
lot of stuff on it on the Net.
Use define(`SMART_HOST',`your.smtp.server') in the mc file.
