Building a Linux-From-Scratch would be a good way of learning a lot of
things that you will generally not learn otherwise. But thats only
after you know some of the basics. So any of the above distros would
be a good place to start.

And Gentoo would be a nice compromise! ;-) At least, if you can follow the
docs for a while!
Of course, this is only really good if you've got a net connection that can
support it (broadband, essentially)...
